The Bajan-themed menu includes Bajan chicken soup with salt bread, mango coleslaw, macaroni pie, split peas & rice, cou-cou, local grilled fish in creole sauce, tamarind glazed pork chops, a live station with honey mustard glazed ham and Bajan fish cakes & bakes, and desserts such as traditional Independence conkies, sugar cakes, coconut turnovers and passionfruit cheesecake.
